New Haven Food Truck Pioneer Unveils New Name of Local Restaurant; Ali Baba’s Fusion Matures Into Ali Baba’s Kitchen (Hamden, CT)
November 18, 2020 - Restaurant owner Jamshed Khalid has announced his popular local eatery, Ali Baba’s Fusion, is evolving. His Halal restaurant will be known as Ali Baba’s Kitchen beginning December 11, 2020. The evolution includes new menu items, a newly designed website, and signage as the restaurant is undergoing its rebranding to better reflect customers’ dining habits, while preparing to offer franchise opportunities throughout the Northeast.
Customers have expressed a desire for healthier food options. Ali Baba’s Kitchen’s new menu items will include tamarind glazed chicken wings, new sandwiches, and low carb menu options.
Khalid has been serving delicious Halal meals inspired by Indian and Pakistani cuisine to the southern New England community since 2000. When he decided to open his first brick and mortar location, he named his restaurant after the famed story of Ali Baba and the Forty Thieves.
The restaurant started with food carts located around Yale University’s campus in New Haven. The carts’ popularity eventually led to the flagship location in Hamden in 2014. The restaurant concept comes from the co-owners mission to create an eatery that feels like their personal kitchen featuring South Asian and Mediterrean cuisine with a Western twist.
“The evolution from Fusion to Ali Baba’s Kitchen is the latest step in a long-term plan to franchise our restaurant concept,” said Khalid. “With my wife Sobia, we were proud to be one of the first family-owned restaurants to bring unique Indian and Pakistani dishes featuring our mix of fresh ingredients, bold flavors and spices to hungry New Englanders. As our customers' palettes have expanded, they are seeking more health-conscious versions of some of our favorite dishes. We are thrilled to oblige and offer lighter options, beverages and new entrees.”

The Khalid family plans to host a ribbon cutting ceremony with the Hamden Chamber of Commerce on December 11th.
